Found a really good Youtube video called Pathophysiology of the Living Dead via the Midnight Podcast.  Pathophysiology of the Living Dead Episode zero is an introduction to the series of videos dedicated to the science of zombies.  Overall this is the introduction of the series but should be good be sure to check it out.
